Healthy Cook-Up with Dr. Soski: Episode 16 - General M’s Sauce…with special guest Dr. Andersen!

Today we will be making my special sauce recipe with fried tofu and veggies over rice. My partner likes to call this General M’s Sauce, because it is similar to General Tso’s sauce.

Ingredients:

  • 1-2 brick tofu, pressed, cut into cubes

  • 4-5 servings of veggies

  • Sesame or coconut oil

  • Rice or quinoa, precooked (to serve the rest over)

  • Sauce Ingredients:

    • 2 tsp Thai Chili Oil (mix well before using so you get the chili pieces in as well)

    • 1/3 cup soy sauce or tamari

    • 1 tbsp maple syrup or 2 tbsp coconut sugar (or more to taste)

    • Juice of 2 limes

    • 1 tsp garlic powder

    • 2-inch piece of ginger, grated (or 2 tsp ginger powder)

    • 2 tbsp toasted sesame oil

    • 2 teaspoons cornstarch or arrowroot powder

Directions

  • Mix the sauce ingredients in a small bowl and set aside.

  • Heat the oil in a nonstick or cast iron pan over medium-high heat.

  • Add cubes of tofu. Fry on one side 3-5 minutes until golden, then flip to the other side and repeat.

  • When tofu is cooked, mix in all but 2 tablespoons of the sauce. Then stir the cornstarch or arrowroot powder into the leftover sauce until there are no lumps then add that to the pan.

  • Cook until the sauce thickens, about 3 to 5 minutes. Serve over rice.

  • For veggies: Heat oil in a wok or large sauté pan. Once the oil is hot add veggies until and sauté until they start to soften, about 3 to 5 minutes (depending on the size of the florets) If you want, you can make up an extra batch of sauce to add to them too!
