Healthy Cook-Up with Dr. Soski: Episode 2 - Roasted Chickpea and Broccoli Tacos!

Today we will be making Roasted Chickpea and Broccoli Tacos!! This recipe is adapted from one of my favorite cook book series: Thug Kitchen. (Seriously, if you haven’t heard about them, check it out!!) Here is the recipe for those who want to follow along:

Ingredients:

  • 1 large yellow onion

  • 1 red bell pepper

  • 1 large crown of broccoli

  • 3 cups cooked chickpeas (or 2 15 oz cans)

  • 3 tbsp of olive oil

  • 2 tbsp soy sauce, Tamari, or Bragg’s Aminos

  • 1 tsp maple syrup

  • 2 tsp chili powder

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1/2 tsp ground coriander

  • Cayenne pepper, to taste

  • 4 garlic cloves, minced

  • 1/2-1 lime

  • Corn or flour tortillas

  • Toppings: spinach, avocado, salsa, hot sauce, fresh cilantro, slaw, or whatever else you want!

Marisa’s Mango Salsa Recipe Ingredients:

  • 2 large heirloom tomatoes (other tomatoes will work too!)

  • 1 cup mango, chopped

  • 1/4 red onion, chopped

  • 1/2 cup chopped cilantro

  • 1 jalapeño, finely diced (optional)

  • 3 garlic cloves, minced

  • Juice of 1/2 lime

  • 1/4 tsp cumin

  • Salt and pepper to taste

Directions:

  • Preheat oven to 425 degrees F.

  • Chop the onion, bell pepper, and broccoli until they are about the size of a chickpea.

  • Place all veggies and cooked chickpeas in a bowl. Add the oil, soy sauce/tamari/Braggs, maple syrup, and spices. Mix until everything is covered

  • Spread mixture out on a cooking sheet and put in oven for 20 minutes.

  • While the veggies and chickpeas are cooking make salsa: Chop all ingredients and mix together in a medium sized bowl.

  • When the 20 minutes are up, take mixture out of the oven and add garlic, stir around and put back in the oven for 15 more minutes.

  • While the veggies and chickpeas are finishing prepare your other toppings and warm tortillas.

  • (To warm tortillas: Heat a small fry pan on medium heat. Lay tortilla in pan and heat each side for 1-2 minutes or until the tortilla kind of “poofs up” a little. Keep warm in a tortilla basket or bowl with a lid.)

  • When the veggies and chickpeas are done cooking, remove and squeeze lime all over.

  • Grab a tortilla, add some veggie and chickpea mixture, mango salsa, and any other toppings you want and enjoy!
