Healthy Cook-Up with Dr. Soski: Episode 9 - Tofu Scramble with Roasted Breakfast Potatoes!

Breakfast is by far my favorite meal of the day and I love cooking breakfast foods!! This week I will be showing you how I make a Tofu Scramble with Roasted Breakfast Potatoes. Here is the ingredient list:

Ingredients:

  • 1 brick tofu, crumbled

  • Coconut oil

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp turmeric

  • 1 tbsp nutritional yeast

  • 1/2 tsp salt or more to taste

  • A few shakes of dried parsley

  • A few shakes of smoked paprika

  • Pepper to taste

  • 3-4 servings of vegetables: onions, bell pepper, zucchini, broccoli, kale, spinach, Brussels sprouts, mushrooms, etc.

  • 3-6 cloves or garlic, minced

  • Optional toppings: salsa, avocado

  • 3-5 medium sized potatoes (I like red or Yukon gold)

  • 3 tbsp olive oil

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp rosemary

  • 1/2 tsp salt

  • 1/2 tsp pepper

Directions:

  • Preheat oven to 375 degrees F.

  • Cut potatoes into 1/2 -1 inch cubes.

  • Add oil, spices, salt, and pepper and mix thoroughly.

  • Spread out on cookie sheet and cook in the oven for 30-45 minutes (leave them in on the longer side if you want them crispier)

  • While the potatoes are cooking prep the tofu and veggies:

  • Crumble the tofu into a bowl.

  • Heat coconut oil in a medium sauce pan.

  • Add in tofu, spices, nutritional yeast, salt, and pepper.

  • Mix thoroughly and cook until heated through.

  • In a medium frying pan heat olive oil.

  • Add onions and saute for 2-3 minutes, then add the rest of the veggies (unless you are adding dark leafy greens, then cook for 5-7 minutes and then add greens.)

  • Cook veggies until they are cooked through.

  • Add in tofu and mix thoroughly.

  • Serve with tofu scramble with a side of breakfast potatoes and enjoy!
