Healthy Cook-Up with Dr. Soski: Episode 11 - Toasted Pecan, Fennel, and Quinoa Salad. Bonus dish: Electrolyte Popsicles!!

It’s summer and boy is it hot out! I thought I’d switch it up and show you some hot weather recipes that require minimal to no cooking. This week I will be showing you how I make a Toasted Pecan, Fennel, and Quinoa Salad. Bonus dish: Electrolyte Popsicles!!

Ingredients

  • 1 cup quinoa, cooked and cooled 

  • 1 14 oz can chickpeas (or 2 cups cooked from dry and cooled)

  • 3 large handfuls of spinach, roughly chopped 

  • 1 red pepper, diced

  • 1/2 fennel bulb, thinly sliced 

  • 1/2 small red onion, diced 

  • 1 cup toasted pecans, chopped (see optional recipe below) 

  • 16(ish) fresh basil leaves, chopped 

  • 1 1/2 cups cherry tomatoes, halved 

  • 1/2 lemon, juiced 

  • Optional additions: 1/2 cup dried cranberries, goat cheese 

Vinaigrette: 

  • 1/4 cup olive oil 

  • 1/8 cup orange juice 

  • 1/8 cup balsamic vinegar 

  • 1-2 tsp grated orange zest 

  • 1 tsp honey

  • 1/2 tsp salt 

  • Pepper to taste 

Optional: Toasted pecans:

  • 1 cup chopped pecans 

  • 1 tbsp oil (I used oil) 

  • 1 tsp coconut sugar 

  • A few shakes of paprika 

  • A good pinch of salt 

Bonus: Electrolyte Popsicles 

  • 3 cups coconut water 

  • 1 cup apple juice 

  • Juice of 1 a lime

  • Juice of 1 orange 

  • 1/8 tsp salt 

  • 1 tbsp honey

  • Popsicle Mold

  • Optional: Hibiscus tea bag (to make it red/pink) 

Directions for Salad:

  • Prepare all ingredients. Mix everything into a bowl except the lemon juice. 

  • Mix all vinaigrette ingredients into a bowl. Mix into salad mixture. 

  • Pour lemon juice over the top and mix in. 

Directions for toasted pecans:

  • Preheat oven to 350 degrees F. 

  • Mix all ingredients in a small bowl. 

  • Lay flat and spread out on a baking sheet. 

  • Bake for 10 minutes, stirring/flipping half way through. 

  • Let cool and enjoy! 

Directions for Electrolyte Popsicles:

  • Mix all ingredients in a bowl of measuring cup. 

  • Pour into popsicle molds. 

  • Put into freezer until frozen.
