Healthy Cook-Up with Dr. Soski: Episode 12 - Garden Salad with Homemade Vinaigrette!!

It’s summer and boy is it hot out! I thought I’d cook another dish that doesn’t require much cooking. This week I will be showing you how I make a Garden Salad with Homemade Vinaigrette!! Here is the ingredient list:
You can essentially use anything you’d like or have around, but here is what I will be using:
A base of greens - I will be using a mixture of lettuce and kaleVeggie toppings - I will be using green beans, tomato, sprouts, beet, and avocado
Protein - I will be using flavored tofu, but other great options include chickpeas, fish, or chicken
Vinaigrette Recipe:
¼ red onion (yellow works as well), finely chopped
2 garlic cloves, minced
2 tbsp Italian seasoning
1/3 cup balsamic vinegar
1 tsp maple syrup
½ tsp salt
½ tsp pepper
1 cup olive oil
Directions:
Mix all vinaigrette ingredients in a 1 pint ball jar.
Add all salad ingredients into a bowl.
Add scoops of salad dressing to salad too desired saturation. Remember to shake the jar before scooping the dressing!
Toss salad and enjoy!
