Healthy Cook-Up with Dr. Soski: Episode 14 - Warm Lentil Beet Salad!!

This week I will be showing you how to throw together a recipe based on what I need to use form my garden. Right now I have beets, green beans, and tomatoes, so lets see what we can throw together!

Ingredients:

  • 1 cup lentils, soaked for 6 hours

  • 2 garlic cloves, smashed & peeled

  • ¼ tsp oregano

  • 1 cinnamon stick

  • 3-4 whole beets, chopped

  • 1 cup cherry tomatoes, halved

  • 1 cup green beans, chopped and blanched

  • Optional additions: red pepper, avocado, olives, feta, goat, or vegan cheese, basil, arugula

  • Optional: serve over rice, quinoa, or lettuce

  • Vinaigrette to roost beets in:

  • ¼ red onion (yellow works as well), finely chopped

  • 2 garlic cloves, minced

  • 2 tbsp Italian seasoning

  • 1/3 cup balsamic vinegar

  • 1 tsp maple syrup

  • ½ tsp salt

  • ½ tsp pepper

  • 1 cup olive oil

Directions:

  • Preheat oven to 375 degrees F.

  • Make vinaigrette or use premade.

  • Chop beets into small or medium small pieces (the larger then are the more time it will take to cook.)

  • Toss beets in vinaigrette so they are coated. Lay them on a baking sheet and cook in oven for 20-45 minutes (depending on size).

  • Rinse soaked lentils in put in 3-4 cups of water. Add bay leaves, oregano, cinnamon, 2 cloves of garlic and a pinch of salt. Bring to boil then simmer for 20 minutes.

  • While beets and lentils are cooking, blanch and prepare the rest of your vegetables.

  • When all ingredients are cooked or prepared, toss together in a medium bowl.

  • Serve over rice, quinoa, or salad greens and add optional toppings.

  • Enjoy!
