Healthy Cook-Up with Dr. Soski: Episode 13: Homemade Granola and Nut Milk!!

I wanted to bring you another awesome breakfast recipe, since breakfast is my favorite meal of the day! This week we will be make Granola and Nut Milk!! Here is the ingredient list:
For Granola:
2 cups oats
1/4 cup oil - coconut, olive, or avocado (they each have a different flavor, I prefer coconut)
1/4 or 1/3 cups maple syrup (larger quantity if you like it sweeter)
1 tsp vanilla
Optional additions:
½ cup chopped nuts (walnuts, almond, pecans, etc.)
½ cup seeds (chia, hemp, flax, sunflower, pumpkin)
Dried fruit, raisins, cranberries
Coconut flakes
Chocolate chips
For nut milk:
1 cup nuts, soaked for 6 hours. I will be using almonds, but this also works well with cashews, pecans, walnuts, and hazelnuts.
4-5 cups filtered water
1/4 tsp salt
1/2 tsp vanilla extract
Directions for Granola:
Preheat oven to 350 degrees
Mix oats, oil, maple syrup, vanilla, and optional nuts (save seeds for the end so they don’t burnin the oven)
Spread mixture thinly on a cookie sheet lined in parchment
Bake at 350 for about 20 min, stirring 1/2 way through and repatting it flat. Keep an eye out near the end to make sure it does not become over-cooked.
Take out and cool completely.
Crush to desired consistency.
Add in any other extras, mix, and enjoy!
Directions for Nut Milk:
Strain and rinse soaked nuts
Blend in 2 cups of clean water. For harder nuts (such as almonds) blend on medium-high for 30 seconds. For softer nuts (such as walnut, cashew, or macadamia nut) blend on low-medium for 20 seconds
Strain nut-water mixture. For harder nuts you may need to press out liquid. For softer nuts, do not press or you will get too much nut sediment.
Add water to strained liquid until it is 3 cups
Mix in salt and vanilla
Enjoy!
